Matcha is a Japanese green powdered tea, used in the cha-no-yu tea ceremony (literally meaning "hot water for tea") and to flavour food (e.g. noodles, cookies, ice creams).
Matcha is produced from leaves of bushes specially shaded with mats, which distinguishes it from the species used to manufacture e.g. sencha. At least two weeks prior to harvest, bushes are covered from the sunlight, in order to delay their growth. In this way/thereby, according to the procedures developed in the Azuchi-Momoyama era, tencha which is used to manufacture matcha and gyokuro are produced. Leaves of the plant turn a pale shade of green and produce amino acids, owing to which the tea is sweeter and more aromatic. Harvested leaves are dried and then ground into a powder.
